Visit a salting-drying of hams.

Our hosts will walk you through the whole process of curing-salting Trevélez artisanal jamón serrano, so you can see the various stages through which it passes, from a pig's fleg to become a delicious ham. This dryer works exclusively with female ham legs with certified fat and perform frequent controls of pH and temperature. They will explain to you the purpose of each of these measures and how to interpret the results. You'll see how to smear lard and salt and learn why the bacterial flora of this area is so favorable for curing hams. Our hosts will teach you some of the secrets to differentiate the different qualities of hams, depending on the time of maturity, saturated fats content, salt or aroma.

Information about the craftsman

This family dryer has been working for decades thanks to our host, a neighbor of the Alpujarra who decided to dry hams as it has been always done: with sea salt and lard. His craftsmanship tradition and the pure air of Trevélez do everything else to get a spanish ham with a unique flavor.

Information about the area

Trevélez is the highest point of the Alpujarras mountains, and also the highest village in Spain (1,476 meters above sea level). It is famous for its rich landscape and its typical Alpujarra architecture: narrow steep streets, white houses with flat roofs and chimneys.

The surrounding area offers beautiful natural landscapes on the slopes of Sierra Nevada, making it an ideal place to start hiking trails: Siete Lagunas, Pico del Rey, the Alcazaba, Vacares, Cerro Pelao and even the Mulhacén, the  highest summit in the Iberian Peninsula. It is also a great area for fishing as its clean rivers constitute the perfect spot for trout.

The cuisine is well known for the Iberian pork products, but “migas”, river fish and chestnut sweets will also delight visitors.
